The Ultimate Salsa:

Chopped Fine (The Guts)
2 medium sized spanish (red)onions
3 Green Bell Peppers
2 Red Bell Peppers
3 Medium sites Tomatoes
2 Jalepeno peppers (with seeds) diced fine
4 Garlic Cloves
1 Shallot (type of onion (optional))

The Juice
Juice from 1 lemon
1/2 cup Olive Oil
1 1/2 Cups Vinegar
1 1/2 Cups Tomato Paste

The Kick
5 Tablespoons Fresh Cilantro (Diced fine)
1 Tablespoon ground black pepper
3 Shakes of Tabasco
1/2 teaspoon thyme
1 teaspoon oregano
1 teaspoon salt
1 teaspoon basil
1 teaspoon paprika
1 tablespoon parsley

The Procedure:
Chop the Guts
Add the Juice
Toss in the Kick
Mix it up

Let sit (marinate) for at least 24 hours.
