Chili Paste
Chili, Garlic, Vinegar, Salt

Peanut Sauce
1 tbs Vinegar
2 tbs sugar
1 pinch salt
2 tbs peanuts (toasted and crushed)
1 tsp ground fresh chili paste
5-7 sprigs cilantro

Procedure: mix all, heat till sugar disolves (top with crushed peanuts or cashews)
* good with: fried tofu (baked or fried in bite size piece, till browned)



Pad See Ew (serves 2)
1 tbs sugar
1/2 cup Pork or Tofu
2 tbs light soy sauce
2 cloves garlic
1lb fresh flat rice noodles
1 tbs dark soy sauce
1lb Chinese Broccolli

Procedure:
cut chinese broccoli stems in half (for faster cooking)
add oil to hot pan
add garlic
add pork or tofu
add rice noodles
add light and dark soysauce and sugar
stir, part ingredients, fry egg in center of mix
aff chinese broccoli
sprinkle with white pepper



Spicy Shallot Sauce
1 tsp toasted rice (crushed)
2 shallots thinly sliced
1 tsp ground dried chili pepper
3 tbs fish sauce
3/4 tsp lime
