Caesar Salad Dressing
2 cups water
1 egg
5 tbs double strength chicken stock
1 tbs olive oil
6-7 drops worcestershire sauce
a few drops of hot pepper saice
1 minced clove of garlic
ground black pepper
2 tbs fresh grated parm cheese
Blue Cheese Dressing
5 lbs blue cheese
2 tubs sour cream
1 quart light cream
1/2 oz black pepper
2 gallons mayonnaise
1 tub cottage cheese
8 oz champagne vinegar
1 oz chopped garlic
Ranch Dressing
2 gallons mayonnaise
1 tbs white pepper
1 tbs sage
1 tbs cayenne
1 tbs dry mustard
1 tbs lavender
2 tubs sour cream
2 tbs kosher salt
1 tbs celery seed
1 tbs thyme
2 tbs garlic powder
4 oz fresh garlic
Balsamic/Walnut Oil Vinaigrette
Chicken stock
Walnut oil
balsamic vinegar
1/2 tsp prepared mustard
1/2 tsp sugar
fresh ground pepper (to taste)
Fresh Herb Vinaigrette
1 cup loosely packed basil leaves
1/2 cup loosely packed tarragon leaves
2 tbs demi or veleute (fish or chicken) stock
1 tbs raspberry or red wine vinegar
1 tbs safflower oil
1 scant tsp sugar
pepper to taste
Herbed French Vinaigrette
5 tbs chicken stock
2 tbs red wine
1 tsp sugar
1/2 tsp dijon mustard
1 tbs olive oil
1 clove garlic (minced)
2 tsp chives (minced)
1 tsp paprika
Lemon Vinaigrette
5 tbs chicken stock
1 tbs extra virgin olive oil
1 tbs lemon jiuce
1 tbs red wine vinegar
1 tsp sugar
fresh ground pepper (to taste)
1 tsp minced fresh parsley
