Aioli (Herb Garlic)
Juice of 16 lemons
3 gallons amyonnaise
24 oz champagne vinegar
1/2 cup chopped parsley
1/2 cup chopped thyme
2 cups chopped garlic
6 Tbs cracked pepper
1/4 cup paprika
1/2 cup chopped basil

Procedure: Combine All, mix well

Spicy Chipotle Chili Mayonnaise
1/2 cup light mayonnaise
1-2 tsp minced chipotle chilli
1 tsp ground cumin

Remoulade
1/2 gallon mayonnaise
1/2 cup capers
2 cups drained relish
1 tbs Anchovy paste (anchovy paste is anchovies and olive oil pureed to a paste)
4 tbs Dijon mustard
