Mint Jelly (makes 3-4 half pints)
Procedure:
1) Chopped Mint, water, sugar, vineger
2) Rolling Boil
3) add pectin (and food coloring if used)
4) Boil Rapidly for 30 seconds
5) Remove from heat and skim foam with a slotted
spoon
6) strain through 2 layers of damp cheesecloth
7) ladel into hot sterilized jars
8) Seal with paraffin
* Leave 1/2 inch on top as headspace to allow
expansion
