Clarified Butter
Clarified Butter is an essential oil. Butter contains milk product. It is for this reason butter has a much lower smokepoint than common cooking oils. The Milk product burns at a lower temperature than other oils. 

To Clarify butter
To Clarify butter is to remove the milk product and water.

Heat butter in a pan on medium heat. Skim off any light colored frothy foam that rises to the top. Gradually increase the heat and continue skimming. Once your butter is hot, clear, and free of milk product. You have made clarified butter.

*IMPORTANT TIP: Be sure to clarify butter in a large pot with high sides as Butter (when heated) has the tendency to boil over and could result in a nasty kitchen fire. DO NOT LEAVE UNATTENDED

Bercy Butter
Shallots
1 tbs lemon juice
1 tbs vinegar
1/4 tsp black pepper
1/2 cup softened butter

Blue Cheese Chive & Horseradish Butter
1/4 lb butter
2 tbs chives
2 tbs parsley
1 tbs lemon juice
3/4 tbs fresh herbs (minced)
1 tbs anchovy paste
1 tbs horseradish
2 tbs watercrest
1 1/3 cup blue cheese
1/8 tsp garlic.
